PROTECTED GEOGRAPHICAL INDICATION
To protect the Sicilian heritage and the biodiversity, we only plant and harvest olives from local cultivars.
Sicilian cultivars are characterized by rich sensory profiles and remarkable hints of almond, green or ripe tomatoes, artichokes, and other aromatic plants typical of the territory. Cuimani Extra Virgin Olive Oil is produced exclusively under the IGP standards of Protected Geographical Indication, which ensures that our production is coming only from olives of Sicilian cultivars.
Among the local cultivars are Biancolilla, Nocellelara Etnea, Nocellara del Belice, Cerasuola, Giarraffa, and Moresca.


HIGH ALTITUDE PLANTATIONS
We strive to produce high quality and healthy products. For this reason, our Extra Virgin Olive Oil is produced in the area of central Sicily, with plantation altitudes ranging from 500 to 800 meters.
The climate is characterized by hot and dry weather in summer, a mild and rainy winter, and strong temperature variations between day and night. Above all, the temperature variations combined with different levels of humidity in winter and summer stimulate the plant to produce high levels of antioxidants and vitamin E.
A diet high in antioxidants from olive oil helps boosting the body's natural defenses, may reduce the risk of heart diseases, and protects the skin from aging.
TRADITIONAL HARVESTING WITH CARE
Olive yields are subject to high fluctuations between each harvest. Some of the factors that may negatively influence the harvest are sudden weather changes and several pests and diseases, which can impair the efforts of the farmers.
Although intensive agriculture and pesticides are an easy way to mitigate these risks, we have decided to commit exclusively to organic production from sustainable farming, pesticide-free only.
The extra work we invest and the risks we take are rewarded with a pure and genuine Extra Virgin Olive Oil. In addition, the close collaboration with our family of small producers enables us to select the freshest olives directly from the fields.


CONTINUOUS INNOVATION
Traditional methods of olive oil extraction are no longer able to guarantee the quality level obtained by modern technology. They stress and heat the olives during the milling, which results in lower levels of nutrients.
By using modern and advanced technology, Cuimani succeeds in preserving higher levels of nutrients from freshly harvested olives. The result is an Extra Virgin Olive Oil that is naturally higher in polyphenols (powerful antioxidants) and vitamin E, with a rich aromatic profile.
Right after the milling, the storage of the olive oil represents another extremely delicate phase. Light, air, and heat can spoil all efforts made during the extraction. For this reason, we store our olive oil only in air-tight silos at controlled temperature to protect the final produce from oxidation and heat.
